Tasty Salmon Recipe


This is a really tasty dish and it’s super easy to make! It’s a filling meal and relatively healthy too. The original recipe can be found here, but I’ve made a few adjustments!


Here’s what you need and how to do it:


  • Salmon fillets – you can get these fresh or frozen, up to you!
  • Sweet Potato
  • Broccoli (or whatever vegetables you want!)
  • Olive oil
  • Paprika
  • 2 cloves garlic, crushed
  • Rice

For the glaze:

  • 2 Tbsp Honey
  • 2 Tbsp Lemon juice
  • Chopped Ginger (however much you like, I like lots!)
  • 2 cloves garlic, crushed
  • Couple of sprigs of thyme


  1. Preheat your oven to 200 degrees
  2. Chop up your sweet potato and sprinkle with paprika, crushed garlic and olive oil. Make sure it’s all coated and pop in the oven for about 30 minutes. (check throughout and give them turn if they need it)
  3. If you’re cooking the rice on the hob, then I’d start it now. The amount of times I’ve forgotten to put my rice on is getting silly and now when anyone in the house forgets to start their rice it’s called ‘doing a Lucy’…whoops!
  4. In the meantime you can create the glaze for your salmon. Mix together all the ingredients listed for the glaze and then smother your salmon fillets in it! Leave in the fridge for 10 minutes so the salmon can soak up all that lovely flavour.
  5. Pop your salmon fillet in some tinfoil and place in the oven with your sweet potato. You can even pop some fresh lemon slices on top of your salmon for extra flavour if you like. It’ll take about 10-12 minutes for the salmon to cook.
  6. Whilst your salmon is cooking with the sweet potatoes, chuck your broccoli (or whatever vegetable you chose) in some boiling water for 5 minutes until cooked through.
  7. Serve and enjoy!!
